kiiiiinda fucked this up.. i ended up with a real sincere medium instead of medium rare.. 25 minutes at 500 is just not ok. next time ill try like 16 minutes.

i think ive heard that elsewhere as well. iirc there was some debate on the two. the sear/bath method on a triptip doesnt really make sense to me since the bark is going to end up soaking in juices.

perhaps im wrong.. ive gotten great results from bath -> sear in the past tho.

worth research imo.

bottom line, i ate like a solid $25 worth of tritip while watching rambo I and II and if i can be blunt my rub game is peerless on these streets.
